A dock fixed with 3M tape is ok to me. But I had only bad experiences with suction cup mounts, no matter how clean the cup and window were. I blame the important temperature variations.

Then you might be pleased to hear this. Both of my Viofo cams came with two docks. This would make it easy to buy one camera and move it between two cars. That might be helpful if you're on a tight budget or something.

Ojocam mini pro 2. Small, fits tucked up right behind my mirror and I bought a wire to tap into the power at my rearview mirror, so super clean install.

Any suggestions for a camera setup that records at or close to 360º coverage? I'm looking for something that will do front and rear for traffic but also the sides for parking/vandalism.

You can do 2x Viofo A129 Dual. But mounting the remote cameras for side-view use will be very custom. Would be cool to have some cameras that are externally mountable under a side-view mirror to emulate Tesla's sentry mode.
