You are doing it right. Fix it then sue the PERSON who hit you for the repair costs. Let them have insurance file to defend and your damages are now ironclad and they will lose AND eat all your costs.
NOW you need to be pursuing your diminished value as well as any other problems. Have you seen any doctors over all the stress this has been causing you? You should.

Update. Ended up going through my insurance as the shop I found didn't deal with National General. I guess they gave the body shop enough bad checks that they blacklisted them.
I should get the car back this week. The body shop pushed my insurance to use an OEM bumper cover, saying it would take more labor to get the non-oem to fit properly.
Since I just got the final bill (paid 100% by my insurance), anyone want to play guess the damage?
